Summary

Obviously, I broke up the routine a little bit today. I actually wasn’t that hungry and knew I wasn’t going to have time for a workout, so I skipped a big breakfast and lunch. I also made a primal eggplant to bring over my dad’s house for his birthday. The major difference with this eggplant parm and typical eggplant parm is substituting bread crumb with ground flax. I mix my flax with grated Parmesan cheese and fresh chopped parsley. The flax provides an earthier, slightly nuttier flavor that works really well with the eggplant. I’ll post a recipe soon.

Today was the first day I had to make a real effort to skip out on good eats like fried mozzarella sticks, BBQ chicken wings, and ice cream cake. But, after eating the eggplant parm, I was pretty full, so it really didn’t bother me that much. Guess I’m starting to adjust to the lifestyle a bit.
